We have never tasted a better home-made tomato soup; it was the delight of
our younger days and still is!
2 cups stewed tomatoes, canned
2 cups milk
2 Tablespoons butter
2 Tablespoons flour
2 Tablespoons onion, chopped fine (optional)
1 Bay leaf
½ teaspoon sugar
Tabasco sauce to taste
Heat and thicken milk by mixing flour and butter together, then add to milk.
Heat tomatoes in different sauce pan. Add onion and bay leaf. ½ teaspoon
sugar improves flavor. Add tomatoes slowly to milk, stirring constantly.
Do not allow to boil (or the soup may curdle). Serve with croutons or soda
crackers.
NOTE: Have ½ teaspoon soda handy to add in case the soup starts to curdle.
