Fresh Cranberry Sauce

1 lb. Fresh cranberries
2 cups sugar
Zest of one orange – be sure to not grate too deeply as the white is bitter

Rinse cranberries. Put in Kitchen Aid mixer with the flat paddle beater. Add sugar and the orange zest and mix on low speed for 15 minutes. Let rest ½ hour. Scrape down the sides and mix again for 10 minutes or until sugar is completely dissolved. Refrigerate over night and it will thicken. This keeps a month in the fridge. It also freezes well.

*We love this with turkey and pork. It is good spread on a turkey sandwich.
