Pasta Salad

Choose different shapes and colors of pasta to make the salad more interesting
Boil with water, 1 tsp. Salt and 1 tblsp. Oil. Cook until tender.

You can add about anything to your salad, here are some suggestions:
Boiled chicken breasts cut into bite size cubes
Cherry tomatoes, whole or cut in half
Olives
Onions
Summer squash – yellow or green – small pieces
Peppers – any color
Cucumbers

Then I mix up an envelope of zesty italian dressing following the instructions, and then add at least a tablespoon more of balsamic vinegar. Also, I add about 1 tsp. Of salt, ( I like things salty) You be the judge. Use a rubber spatula when mixing so you don’t crush the ingredients. It tastes best if it has time to chill.

Sticky pecan caramel cinnamon rolls

Here is the cinnamon roll recipes that we made a few weekends ago and they tasted so good. You just use the master bread recipe
The Dough

A cantaloupe sized chunk of the Master Dough (about 1.5 lbs)

The Gooey Sticky Caramel Topping

6 tbl unsalted butter, softened

1/2 tsp salt

1/2 cup brown sugar

30 pecan halves

The Heavenly Sweet Cinnamon Butter Filling

4 tbl unsalted butter, softened

1/4 cup sugar

1 tsp ground cinnamon

1/4 tsp freshly grated nutmeg

1/2 cup chopped and toasted pecans

pinch of freshly ground black pepper

9″ square or round cake pan

The first thing you need to do is take that master dough out of the refrigerator, grab a small cantaloupe sized chunk of dough. Return the rest of it to the refrigerator to use another time. Generously flour your hands and the dough. Shape the dough into a ball by stretching the surface of the dough and tucking it to the bottom all around, rotating the ball a quarter-turn as you go. This creates a taut, smooth surface. Let the dough rest, covered with a towel to take the chill off while you prepare rest of ingredients.

While the dough is unchilling, mix the topping and the filling.

FOR THE TOPPING: Cream together the butter, salt and sugar. Spread this topping evenly on the bottom of the cake pan. Scatter with pecan halves.

FOR THE FILLING: Cream together all ingredients except the pecans. Set aside.

Dust your counter with flour and roll out the dough with a rolling pin to 1/8″ thick rectangle. Try to get it 13″ x 17″ I had trouble with the rectangle shape, so I we just rolled it into a large oval. Spread the sweet butter filling evenly on the surface. Scatter chopped pecans all over.

Roll it up, starting with the long side.

Flour your serrated knife and cut roll into 9 even pieces (square pan) or 8 pieces (round pan).

Set it in the pan on top of the caramel, cover with towel and rest for 1 hour

Preheat your oven to 350F. The book says to bake for 40 minutes, or until golden brown and well set in the center. But take a peek at the rolls around the 35 minute mark.

While still hot, run a knife round the edge of pan and invert immediately onto a plate. If you wait until it cools, the caramel will harden and it will be difficult to turn out.

Red Velvet Cake

2 1/2 cups all purpose flour
2 cups sugar
1 Tablespoon cocoa
1 teaspoon salt
1 teaspoon baking soda
2 eggs
1 1/2 cups oil
1 cup buttermilk
1 Tablespoon vinegar
1 teaspoon vanilla
2 oz. red food coloring

Preheat oven to 350 degrees.
Grease and flour two 8 inch cake pans.
Lightly stir eggs in a medium bowl with a wire whisk. Add remaining liquid ingredients and stir together with whisk until blended. Set aside.
Place all the dry ingredients in your mixing bowl and stir together really good with another wire whisk.
Add wet ingredients to the dry ingredients and mix on medium-high for about a minute or until completely combined.
Pour into cake pans and then drop the pans on the counter a few times to release any air bubbles.
Bake for about 30 minutes or until a toothpick inserted comes out clean.
After about ten minutes, remove from pans and cool completely on a wire rack. I also cover in plastic wrap while the cakes cool.
Then make the frosting.

Cream Cheese Frosting

1 teaspoon vanilla
6 cups confectioners’ sugar

Sift sugar and set aside.
Beat cream cheese and butter on high until creamy. Add vanilla.

Elegant Chicken:

In a pyrex casserole pan layer the following:

Form meat balls about the size of pingpong balls, or just a bit bigger.
Place in the baking dish close together
Pour 1 can of tomato soup over the top and cover the dish with a lid or foil.

Bake at 350’ for about 40 minutes.

Hamburger Pie

1 lb. Hamburger – press this into a large pie pan- bake at 350’ for about 15 –20 min, until brown and cooked, drain off any grease

“Mother, this recipe came from the magazine Country Women. I made it a long time ago and the family loved it. When you said you needed dessert recipes I went thru my cake section and found this. It is quite moist so maybe the flour difference won’t matter as much. The “Country Women” says, “My all time favorite cake recipes include this one. It’s easy to make, pretty to look at...and delicious. I never fail to get compliments when I serve this to family’ or friends~~the sweet/tart taste is a treat.”

This is pretty served in sherbets or small bowls.

Hot Fudge Mallow Cake - omit nuts: add 1 cup miniature marshmallows. I haven’t tried this variation but I’LL BET IT IS GOOD.

We used to make this for family home evening. The boys loved it. It has a sauce when it is done cooking so don’t keep baking it to get it firm. It is kind of like pudding. I did not put in the nuts but I bet they would be good, especially almonds.
This recipe came off of the Gold Medal Flour sack. This is the low altitude recipe.
Try it! Maybe the missionaries will like it :)
~Tawna sent this recipe to Phyllis when she was cooking for the missionaries in Scotland.

French Dip Sandwiches

This is always great on a cold day, especially when you don’t have time to peel potatoes.
Cook roast overnight or all day in crock pot. I use Knorr oxtail soup but you can pour over a can of Coke and french onion soup also.
Slice hard rolls and put on meat. They can stay warm covered with foil in the oven this way,
Serve with au juice, green beans and fruit.

Bubbly Bread

One of my children's favorites!

Use Rhodes dough if available or make a basic unsweetened dough.
Roll out dough to fît either a round pizza pan or to fit a jelly roll pan.,
Grease the pan. Put rolled out dough into pan. Sprinkle with Parmesan cheese (the fresh grated kind or the regular kind). Roll cheese into dough with rolling pin.
You can also top with sauted onions or mushrooms or both. My children love it plain without either.
Bake at 425 degrees for 10 minutes or until done. Don't overcook or it will be too dry.
Slice into wedges of rectangular pieces.
Heat up marinara sauce or regular spaghetti sauce
Serve and eat by dipping bread into sauce.
Serve with a green salad and orange or apple slices.
The bread is also good as leftovers and served cold or warm.

Grandma's Sour Dough Rolls

It's best to use pre-made starter, but if you don't have one you may try to make your own.

Step 1: To make the starter for biscuits add 1 cup flour and 1 cup warm water to bottle, stir well, let set in warm place for awhile until it bubbles and rises. Pour out 2 cups into a large glass bowl add 1/2 cup canned milk (always use canned milk), 1/2 cup warm water, 3 cups flour. Stir this up well, cover bowl and let work all night in a warm place.

Step 2:
2 cups flour
1 t. soda
2 t. baking powder
2 T. sugar
1 t. salt
3 cups flour

Make biscuits in large glass bowl add 2 cups flour, soda, baking powder, sugar and salt. Mix with wooden spoon. Have 3 cups flour on mixing board. Make "well" in flour and pour above mixture in it. Mix and knead well, if dough seems stiff add a little hot water when mixing it. Roll out about 1/2 to 3/4 inch high, cut out and dip in melted butter. Place in greased dripper pan, cover and let rise 1 hour in warm place. Bake 30 minutes at 350, (increase heat a little if at high altitude). Makes about 2 dozen biscuits, can be frozen and heated up.

To keep starter going after you take 2 cups out to make biscuits, add 1 cup flour and 1 cup warm water, stir well and let rise in warm place, stir down and put in fridge to keep it. Never add anything but flour and water to starter.

Pecan Pie

Pie Crust: - makes 2 pie crusts
2 cups flour
1 tsp. salt
¾ cup shortening or butter
4 – 5 Tbsp. cold water

Combine flour and salt in mixing bowl. Cut in shortening with two knives until mixture is the consistency of coarse cornmeal or tiny peas.

Sprinkle on cold water, 1 Tbsp. at a time tossing mixture lightly and stirring with fork. Add water each time to the driest part of mixture. The dough should be just moist enough to hold together when pressed gently with a fork. It should not be sticky.

Shape dough into 2 smooth balls with hands and roll out on sprinkled flour. If you have nothing to roll out with then gently press dough into pie tin. If it doesn’t look to great that is okay because you’ll put the pecan batter in on top. Leave a little extra dough around the edges and crimp it into what I hope you remember the edge looking like.

Pecan Pie filling
½ cup butter – melted
1 cup sugar
3 eggs
¾ cups dark Karo syrup ¼ tsp. salt
1 tsp. vanilla
1 ½ cups pecans

Bake at 350 for 50 minutes.

No Knead Bread

Adapted from Jim Lahey, Sullivan Street Bakery - From NY Times
Time: About 1½ hours plus 14 to 20 hours’ rising

3 cups all-purpose or bread flour, more for dusting
¼ teaspoon instant yeast
1¼ teaspoons salt
Cornmeal or wheat bran as needed.
1. In a large bowl combine flour, yeast and salt. Add 1 1/2 cups water, and stir until blended; dough will be shaggy and sticky. Cover bowl with plastic wrap. Let dough rest at least 12 hours, preferably about 18, at warm room temperature, about 70 degrees.
2. Dough is ready when its surface is dotted with bubbles. Lightly flour a work surface and place dough on it; sprinkle it with a little more flour and fold it over on itself once or twice. Cover loosely with plastic wrap and let rest about 15 minutes.
3. Using just enough flour to keep dough from sticking to work surface or to your fingers, gently and quickly shape dough into a ball. Generously coat a cotton towel (not terry cloth) with flour, wheat bran or cornmeal; put dough seam side down on towel and dust with more flour, bran or cornmeal. Cover with another cotton towel and let rise for about 2 hours. When it is ready, dough will be more than double in size and will not readily spring back when poked with a finger.
4. At least a half-hour before dough is ready, heat oven to 450 degrees. Put a 6- to 8-quart heavy covered pot (cast iron, enamel, Pyrex or ceramic) in oven as it heats. When dough is ready, carefully remove pot from oven. Slide your hand under towel and turn dough over into pot, seam side up; it may look like a mess, but that is O.K. Shake pan once or twice if dough is unevenly distributed; it will straighten out as it bakes. Cover with lid and bake 30 minutes, then remove lid and bake another 15 to 30 minutes, until loaf is beautifully browned. Cool on a rack.
Yield: One 1½-pound loaf

My New Favorite Sugar Cookie Recipe . . .
. . . appeared in FOODday recently. They call it "Master Butter Cookie Recipe," and present variations that can be made using the same basic dough. However, having made just the basic cookie, I don't think I'll ever feel the need to make any of the variations. Buttery, crispy, light, melt-in-your-mouth goodness! I'll cut and paste it here since they aren't always available forever on the Oregonian's website. I'm set to mix up another batch tonight, so I'll try to get some good pictures. Mmmmmm.

Master Butter Cookie Recipe
from Oregonian FOODday, December 2, 2008

Ingredients

* 4 C all-purpose flour
* 1 t salt
* 1 t baking powder
* ½ t baking soda
* 1½ C unsalted butter, at room temperature (3 sticks)
* 1⅓ C granulated sugar
* 1 egg
* 1 T vanilla
* ¼ t almond extract

Instructions

In a medium bowl whisk together the flour, salt, baking powder and baking soda; set aside.

In the bowl of a stand mixer (or with a hand mixer), cream the butter and sugar until light and fluffy, about 2 minutes. Beat in the egg, vanilla and almond extract. Gradually add the flour mixture and mix well.

Divide the dough into two portions and shape into 2 rough rectangles. Wrap each rectangle in plastic wrap and refrigerate until well chilled, at least 4 hours or up to 24 hours. (Dough can be frozen for up to one month.) [After 24 hours in the fridge, I needed to leave the dough out for a while before I could roll it out.]

Preheat oven to 350 degrees. Line baking sheets with parchment paper. Set aside.

Roll one rectangle of the cold dough between two sheets of parchment paper or wax paper to ⅛ inch thick. [I roll my dough on a pastry cloth] Remove top layer of paper. Using a 2-inch cookie cutter, cut out as many cookies as possible. Reserve any scraps of dough in the refrigerator while working. If the dough becomes unmanageably soft while rolling, transfer it to a baking sheet and pop it in the freezer for a few minutes to firm up. [This was a pretty firm dough; I didn't need to re-refrigerate any scraps at any point during the rolling-and-cutting process.]

With an offset spatula, transfer cutouts to a baking sheet, spacing at least a ½ inch apart. Bake until just set and very lightly browned on the edges, 10 to 11 minutes. [I baked a little longer, 14 minutes on insulated sheets, until they were golden around the edges and on the verge of coloring more. Divine browned-butter flavor!] Cool the cookies on the baking sheet for 2 minutes, then transfer to a wire rack to cool completely. Repeat with the remaining rectangle of cold dough. Combine reserved dough scraps and repeat all steps.

Lemonade Angel Cupcakes

1 16 oz. Package angel food cake mix
¾ cup water
½ cup frozen lemonade concentrate- thawed
Frosting or topping

Place a rack in the center of the oven; preheat to 350 degrees. Line 24 muffin tins with paper liners.

Place cake mix, water and lemonade concentrate in a large mixing bowl. Beat with an electric mixer on low speed for 30 seconds. Scrape down the sides of the bowl with a rubber spatula. Beat on medium speed for 2 minutes, scraping down the sides again if needed. The batter should look thick and well combined. Spoon or scoop 1/3 cup batter into each lined cupcake cup, filling it ¾ of the way. Remove any empty liners.

Bake until cupcakes are golden and spring back when lightly pressed with you finger, 20 – 22 minutes.

Let pans cool on wire racks for 5 minutes. Run a dinner knife around the edges of the cupcake liners, lift the cupcakes up from the bottoms of the cups using the end of the knife, then pick them carefully out of the cups with your fingertips. Let cool completely on a wire rack about 15 minutes before frosting.

Frosting:

1 (8 oz) Cream Cheese (room temp.)
½ cup butter
3 cups powdered sugar (for a stiffer icing add 2 cups more of powdered sugar)
3 tbsp. frozen lemonade concentrate
1 tsp. grated lemon zest

Lemon Ice Water

Mix and Dissolve:
2 Tbsp. Pure Lemon Extract
2 Tbsp. Citric Acid
3 cups sugar
4 Quarts of Water

When ready to serve add one large bag of pebble ice.

Can buy pebble ice Day’s Market, Ripples or Sonic Drive-In.

Lemon Curd Squares

Crust:
1 cup flour
½ cup sugar
½ tsp. salt
1/8 tsp. ground cinnamon
½ cup cold butter but into small pieces
Heat oven to 350 degrees. Lightly grease an 8 inch square baking dish, presumably glass. In a food processor combine flour, sugar, salt and cinnamon. Pulse briefly until blended. Add the butter pieces and pulse until the dough forms moist crumbs and sticks together when pinched. Press the dough into the bottom and 1 inch up the sides of the greased pan. Bake the crust 20 – 22 minutes until pale golden color. Let the crust cool completely.

Reduce oven temperature to 325 degrees.

For the Filling:

¾ cup sugar
2 tbsp. flour
¼ tsp. salt
1 tsp. finely grated lemon zest
3 large eggs – room temperature
½ cup fresh lemon juice
3 tbsp. heavy cream

Whisk together sugar, flour, salt and zest. Add the eggs, lemon juice and cream and whisk until just blended. Carefully pour the mixture over the baked crust.

Bake until filling is set but still jiggles slightly when the dish is gently shaken – about 20 minutes. Let cool about 30 minutes. Run the tip of a knife along the inside of the dish to loosen the crust from the sides. Then let cool completely.

Sift a dusting of confectioners sugar over the rectangles just before serving.

Simple Crusty Bread

via fuguesalad.blogspot.com
Jane Anne Chovy

I also made the Simple Crusty Bread, and realized as I was looking back that I never put my preferred method all in one post. Here it is:
Simple Crusty Bread
(no-knead variety)
adapted from several sources

6-6 1/2 C unbleached all-purpose flour, or combination of all-purpose and whole wheat (not more than 1/2 whole wheat)
3 C warm tap water (100-110 degrees)
1 1/2 T active dry yeast
1 1/2 T kosher salt
1 1/2 T honey (if using whole wheat flour)

Put water in a large bowl. Add salt and honey, then sprinkle yeast over top and let soften for a couple of minutes. Stir until everything is dissolved, and then add flour to make a thick, sticky dough. Cover with a slightly-dampened kitchen towel and let rest at room temperature for 2-5 hours. Then either cover and refrigerate, or start making loaves.

To make a loaf, sprinkle the dough with a little flour and use a serrated knife (my tomato knife works great) to cut off 1/4-1/3 of the dough. (Unless baking multiple loaves, cover remaining dough and put it in the fridge.) Knead on a flour-covered board just one or two times, to smooth the surface a little and get a little flour on the outside so it sticks less. Then form the dough into a round loaf shape, holding the dough between your hands and stretching it with your thumbs while pushing it back in on itself with your fingers. Turn it over and pinch the pushed-in parts together. Cover the board generously with flour, place loaf on board pinched side down, sprinkle with more flour, and cover loosely with a tea towel. Let rest 40-60 minutes.

One half-hour before baking, turn oven on to 450 degrees and put dutch oven (cast iron and stainless steel both seem to work fine) in to preheat. When ready to bake, take pot from oven and remove lid, slash a deep (1/2-3/4") cross in the dough, and carefully transfer dough to hot pot. Replace lid and put back in oven to bake for 30 minutes. After 30 minutes, remove lid and let cook 10-30 minutes longer, until brown, crusty, and hollow-sounding when tapped on the bottom. Let cool, slice, and serve with good butter.

1 handful fresh basil
½ handful oregano or two tsp. dried
1 cup zucchini - cubed or sliced (optional)

Sauté onion, carrot and garlic until softened. Add broth, cabbage beans and tomatoes and herbs. Simmer until vegetables are tender – about 20 – 30 minutes. Add zucchini and cook 5 minutes.

Fudge

- Wonderfully creamy and tastes like the old-fashioned recipe

4 c. white granulated sugar
2 c. heavy cream
1 c. or 2 cubes butter
2 8 oz. Symphony Milk Chocolate bars or 3 5 oz. bars

Before you begin, break into pieces 2 8oz. Symphony Milk Chocolate bars while still in the wrapping. Take the pieces out of the wrapping and put in a large, heat resistant bowl. Creme Brulee

Ingredients
1 quart heavy cream
1 cup granulated sugar plus 8 teaspoons raw sugar
1 vanilla bean, split and scraped (see note)
8 large egg yolks

Preparation
In a medium-size nonreactive saucepan, combine the cream, 1/2 cup of the granulated sugar, and the vanilla bean and pulp over medium heat. Bring to a gentle boil, whisking to dissolve the sugar.

In a small mixing bowl, whisk the egg yolks and the remaining 1/2 cup of granulated sugar together. Whisk 1 cup of the hot cream mixture into the egg yolk mixture until smooth. Slowly pour this mixture into the hot cream mixture, whisk for 2 minutes, and remove from the heat. Strain the mixture through a fine-mesh sieve. Let cool completely.

Preheat the oven to 300 degrees F.

Fill eight 6-ounce custard cups with equal portions of the cream mixture. Place the cups in a deep baking dish large enough to accommodate them comfortably without touching. Fill the baking dish with enough water to come halfway up the sides of the cups.

Bake in the lower third of the oven until lightly golden brown and just set, about 45 minutes. Remove from the oven and let cool. Cover and refrigerate for at least 4 hours or up to 12 hours.

About 2 hours before serving, sprinkle 1 teaspoon of the raw sugar on the top of each custard. One at a time, using a kitchen blowtorch, approach the sugar with the torch at a low angle until the inner blue flame is 1/4 inch above the surface, and move the flame in a continuous motion over the surface until the sugar has caramelized. Or, preheat the broiler, sprinkle the sugar over the custards, and slide the dishes under the broiler. Broil until the sugar caramelizes, 2 to 3 minutes. Remove and allow the custards to cool again. Refrigerate and serve chilled.

Note: Vanilla beans are long and thin. To get the essence of the bean, it must be split lengthwise, then scraped to remove the resinous, pasty insides. Lay the bean on a flat surface with its seam as the center and split to one end. Place the point back at the center and split it to the other end. Use the blade of the knife to scrape the pasty seeds out.

Yield: 8 servings

....Everybody knows how I like desserts, and usually I like to go over the top. But I think something as simple and easy as this Creme Brulee is perfect after a rich meal.... ?

3-4 T. fresh cilantro

1/3 c. apple juice
1/2 c. sugar
zest of 1 lime

Chop cranberries, apples, red pepper, and cilantro in food processor until fine but not mushy.
Prepare sauce of apple juice, sugar, and lime zest. Pour over processed mixture.
I'm wondering if it would be good to add lime juice, too. Try it and see.

Fresh Cranberry Sauce

1 lb. Fresh cranberries
2 cups sugar
Zest of one orange – be sure to not grate too deeply as the white is bitter

Rinse cranberries. Put in Kitchen Aid mixer with the flat paddle beater. Add sugar and the orange zest and mix on low speed for 15 minutes. Let rest ½ hour. Scrape down the sides and mix again for 10 minutes or until sugar is completely dissolved. Refrigerate over night and it will thicken. This keeps a month in the fridge. It also freezes well.

*We love this with turkey and pork. It is good spread on a turkey sandwich.

Country Pasta With Mozzarella

8 oz. uncooked rigatoni (I used penne and it was wonderful)
8 slices bacon, cut in 1 inch pieces (I used real bacon pieces from Costco)
2 c. broccoli floweretts
1/2 tsp. minced garlic
2 c. shredded Mozzarella cheese
1/4 c. Parmesan cheese (I used real Parmesan)
pinch of cayenne pepper
1/4 c. chopped parsley (I used much less)

Cook rigatoni according to package directions, drain. Meanwhile, in 10 inch skillet, cook bacon over medium high heat until brown. Reduce heat to medium. Add broccoli and garlic. Cook, stirring occasionally, until broccoli is crispy-tender.

Add rigatoni and remaining ingredients, except parsley. Continue cooking, stirring occasionally, until cheese is melted. Sprinkle with parsley.

Notes: Since I used bacon pieces I just cooked my pasta, and while it was cooking I steamed my broccoli. When they were both done I added everything together. Really easy and delicious!

Clam Chowder

2 (6 oz.) cans chopped clams
1 cup chopped onions
1 cup celery
2 cups potatoes cut into ½ inch cubes
1 ½ tsp. salt
½ tsp. sugar
1 tbsp. wine vinegar

Put above ingredients into a soup pot. Drain the clam juice into the pot with the vegetables. Reserve clams to add later. Barely cover vegetables with water and simmer until tender.

In another sauce pan:

½ cup butter
½ cup flour
Cook on medium heat stirring constantly until the mixture looks the color of coffee with cream. Be careful to brown but not burn. Add the mixture to the vegetables when they are tender. Stir until thick.

Add: 3 cups half and half (you can mix half milk and half cream or for a lower calorie version use more milk and less cream).
4 shakes of Tabasco sauce
White pepper to taste

After you have added the half and half do not boil the chowder. Heat on low heat until heated through. Serve and enjoy!
