½ Cup warm water, 2 Tablespoons yeast, ½ Cup sugar - stir together and set aside for
about 10 min to proof (foam up )
Then add:
3 eggs (mixed), 2 teaspoons salt, 2 Cups Warm milk (not hot), ½ Cup sugar, 1 square (1/2 cup) butter melted. Whisk together until smooth.
Then add:
4 Cups flour, stir with large spoon until mixed, then add 4 more cups of flour ( 8 total ) one cup at a time until all mixed. You will need to use your hands and knead in the last 2 cups.
Let set with a cover of lid or plastic wrap for 1 hour to raise.
Then:
Split into 4 even balls, this will make a dozen rolls each.
At this point you can make the orange rolls, plain parker house rolls, or cinnamon rolls depending on how you roll it out.
Bake @350 degrees 12-15 min.
For orange rolls:
roll out dough until it is a rectangle shape. Brush with melted butter until all covered, sprinkle with sugar/orange zest mixture ( 2 C. sugar , zest from 1 large orange mixed in)( you can also add some crazins to give it color for Thanksgiving, chop them up in a blender to get smaller pieces, add 1 T. sugar when blending to keep the mixture from sticking- add this to the orange mixture)
Then cut into long strips, about 2 inches wide and length of rectangle (think stripes on flag) then stack these strips on top of eachother until you have them all together. (think stacks of pancakes)
Then cut into 12 even pieces and put into “well greased” muffin pans. (they will stick if you don’t grease with shortening) Let raise for about 1 more hour, or until they are above the rim of the muffing tins about 1 inch. bake until lightly golden brown (350’ for about 12-15 min )
For Cinnamon rolls:
Roll out rectangle, brush with butter, sprinkle cinnamon sugar layer (brown sugar/cinnamon/raisens if you want) Then roll up starting at bottom end of rectangle and rolling whole end forward until you reach the other end. Pinch the end together so it stays, cut into 12 even pieces and put in buttered roll pan placing the rolls just barely touching, so that when they raise they raise up not out. Bake 350’ for about 15 – 17 min. or until lightly golden brown. Brush with frosting while hot. ( 3 C. powdered sugar, ½ cube butter, and add milk 1 Tablespoon at a time until you get the right consistency you want ) about ¼ cup…
Parker House:
Roll out rectangle, cut into slices - 3x4” size, then roll these slices up jelly roll style, place side by side in buttered roll pan. Brush with butter, let raise until at least double to triple size. Bake 350’ for 15 – 17 min. or until they are golden brown and cooked on the bottom as well. You don’t want to under cook or the rolls in the middle will be doughy.
